Culinary Innovation Under the Microscope: The Case of the Ants in Fine Dining

In the exclusive district of Gangnam, Seoul (a wealthy area in South Korea famous worldwide for its luxury and pop culture), the restaurant Evett is making global headlines. Awarded with two prestigious Michelin stars (the highest honor in the global culinary industry), its chef, the Australian Joseph Lidgerwood, faces a request for one year in prison and a massive fine for serving a dessert containing ants.


The Dessert That Sparked the Controversy

South Korean prosecutors accused Lidgerwood of violating the national food hygiene law by including black ants in a sorbet served as a pre-dessert. The chef stated that this ingredient provided a lemongrass aftertaste and helped cleanse the palate, a technique he learned during his career in the United States and Europe. However, South Korean legislation is strict: it only permits the consumption of ten specific insect species, such as grasshoppers and silkworm larvae, and ants are not on the approved list.

Numbers That Draw Attention

The investigation, which began after detecting posts on social media and blogs, revealed surprising figures. Between April 2021 and January 2025, the dish was sold on 12,200 occasions, generating revenue of 120 million won (approximately USD 81,213.60) and utilizing around 49,000 ants. These ants were legally imported from the United States and Thailand, but they were not authorized for human consumption in the Asian country.

Furthermore, health authorities determined that these ants contained up to 55 times more heavy metals than typical edible insects, raising public safety alarms and underscoring the importance of respecting sanitary controls.

The Chef's Defense and the Future of Gastronomy

The chef acknowledged the facts but claimed he was unaware of the illegality of the practice, since in countries like Denmark, the United Kingdom, and Australia, using insects in fine dining is common. His defense argued that only 60% of clients opted for the ant version, always offering alternatives like fermented vinegar and edible flowers for the rest.

The court is scheduled to announce its verdict on September 2, 2026. This case sets a crucial precedent on how national regulations can adapt to global gastronomic trends, while always keeping consumer health as the absolute priority. The global culinary world awaits this verdict with anticipation, as it will define the balance between the avant-garde and the law.
